Jonines mes šventėm net dvi dienas. Šestadienį mes visi trys: aš,
Julius ir Izzy ilgai vaikščiojom
po mišką, pynėm vainikus, juos leidom į upelį, ieškojom paparčio žiedo ir po
akmenimis pasislėpusių salamandrų.
Sekmadienį šventimas persikėlė prie ežero. Dieną
praleidom besimaudydami, bekurendami kepsninę ir betinginiaudami pavėsyje. Iš
vakaro aš buvau iškepusi daržovių plokštainį, su morkomis, porais ir
garstyčiomis, specialiai Joninių piknikui, nes šis plokštainis labai panašus į
saulę, toks beveik teminis, kaip tik Rasų šventei.
Vakare, po pikniko parėję namo, kūrenom laužą, kepėm S’mores, gėrėm mojitos ir tvarkėm Jūratės ir Kolumbijos atsineštą šokoladinį pyragą.

Daržovių pyragas su garstyčiomis

Padas: miltus, cukrų ir druską suberti į
virtuvinį kombainą ir kelis kartus permalti.
Į miltų mišinį suberti sviesto gabalėlius ir kelis kartus persukti, kad
sviestas daugmaž tolygiai pasiskirstytų miltuose. Kiaušinį išplakti su vandeniu
ir pamažu, per kelis kartus supilti į miltų-sviesto mišinį, kaskart vis sumaišant
tešlą, kol visas kiaušinis tolygiai pasiskirstys, ir tešla bus vis dar
pakankamai biri, bet sulimpanti, ją suspaudus tarp pirštų. Tešlą iškrėsti ant
sauso pamiltuoto paviršiaus (arba ant didelio maistinės plėvelės lakšto) ir
suspausti į diską, maždaug1 cm storio. Tešlos diską įsukti į maistinę plėvelę
ir įdėti į šaldytuvą mažiausiai 3 valandoms, arba pernakt.
Apvalios kepimo formos
(23 cm skersmens) išsiimančiu dugnu vidų ištepti sviestu.
Atšalusią tešlą iškočioti
į maždaug 3 - 4 mm storio skritulį. Iškočiotą tešlą netempiant įtiesti į paruoštą
kepimo formą. Peiliu nupjaustuti per formos kraštus išlendančią tešlą. Tešlos
paviršių keliose vietos subadyti šakute, uždengti maistine plėvele. Įdėti į šaldytuvą
maždaug vienai valandai.
Orkaitę įkaitinti
iki 205oC. Į tešla išklotą kepimo formą įtiesti svirestu pateptą folijos
lakštą. Ant folijos priberti sausų pupelių arba ryžių. Pašauti į orkaitę ir
kepti 20 minučių. Ištraukti iš orkaitės, atsargiai nuimti foliją su pupelėmis
(arba ryžiais), ir toliau kepti dar 5 minutes, kol tešlos paviršius taps šviesiai
auksinės spalvos. Ištraukti iš orkaitės. Leisti pinai atvėsti.
Įdaras: orkaitę įkaitinti iki 220oC.
Ant plačios kepimo skardos patiesti sviestinio popieriaus lakštą. Ant skardos dėti
formą su atvėsusiu pyrago padu.
Morkas nuskusti ir
supjaustyti plonais šiaudeliais. Nupjauti porų tamsiąsias dalis. Baltąsias ir šviesai
žalias dalis supjaustyti plonais šiaudeliais ir kruopščiai nuplauti. Supjaustytas
morkas, porus ir vieną rozmarino šakelę sudėti į kiaurasamtį, uždėtą ant puodo
su verdančiu vandeniu; vandens puode turi būti tiek, kad maždaug per pirštą
nesiektų kiaurasamčio apačios. Uždengti dangčiu. Virti maždaug 7 – 8 minutes,
kol daržovės suminkštės.Nukelti nuo garų. Daržoves perkelti ant rankšluostėliu
ištiesto paviršiaus ir nusausinti.
Dubenyje išplakti
kiaušinius ir grietinėlę. Įmaišyti garstyčias. Patikrinti, ar netrūksta
druskos. Mišinį supilti ant atvėsusio pyrago pado. Ant viršaus išdėlioti
nusausintas morkas, porus ir rozmarino šakeles. Pašauti į orkaitę. Kepti maždaug
30 minučių, kol įdaras lengvai paruduos. Tiekti šiltą, šaltą arba kambario
temperatūros.
Vegetable Mustard Tart
Recipe from DorieGreenspan “Around My French Table”
Crust:
1 ¼ cups flour
1 teaspoon sugar
½ teaspoon salt
6 tablespoons (3/4
stick) butter, frozen ,cut into pieces
1 egg
1 tablespoon ice-cold
water
Filling:
3 thin carrots, peeled
3 thin leeks
Few rosemary springs
3 eggs
6 tablespoons heavy cream
2 tablepoons Dijon mustard
2 tablespoons whole grain mustard
salt
Crust: put the flour, sugar
and salt in the processor and whir a few times to blend. Scatter the bits of
butter over the flour and pulse several times, until the butter is coarsely
mixed into the flour. Beat the egg with the ice water and pour it into the bowl
in a few small additions, whirring after each one. You’ll have a moist,
malleable dough that will hold together when pinched. Turn the dough out onto a
work surface, gather it into a ball and flatten it into a disk. Chill the dough
for at least 3 hours or overnight.
Butter a 9- to 9 1/2-inch tart pan with a removable bottom.
Roll out the dough chilled dough between sheets of wax paper or plastic
wrap into about ¼ inch thick round. Transfer the dough to the tart pan, easing
it into the pan without stretching it. Prick the base of the crust in several
places with a fork. Chill — or freeze — the dough for at least 1 hour before
baking.
Center a rack in the oven and preheat the oven to 400 degrees. Press a
piece of buttered foil against the crust’s surface. Fill the covered crust with
rice or dried beans. Line a baking sheet with parchment paper and put the tart
pan on the sheet.
Bake for 20 minutes, then very carefully remove the foil (with the rice
or beans). Return the crust to the oven and bake for another 5 minutes, or
until it is lightly golden. Transfer the baking sheet to a cooling rack and
allow the crust to cool before you fill it.
Filling: center
a rack in the oven and preheat the oven to 425 degrees. Line a baking sheet
with a silicone baking mat or parchment paper.
Cut the carrots and leeks into slender sticks. Cut the
leeks in the same way and wash them thoroughly.
Fit a steamer basket into a saucepan. Pour in enough water
to come almost up to the steamer, cover, and bring to a boil. Drop the carrots,
leeks, and 1 rosemary sprig into the basket, cover, and steam until the vegetables
are tender enough to be pierced easily with the tip of a knife, 7 to 8 minutes.
Drain the vegetables and pat them dry; discard the rosemary spring.
In a medium bowl, whisk the eggs together with heavy cream.
Add the mustards, season with salt.
Put the tart pan on the lined baking sheet and pour the
filling into the crust. Arrange the vegetables over the filling. Top with the
remaining rosemary sprigs. Bake the tart for about 30 minutes, or until it is
uniformly puffed and lightly browned here and there and a knife inserted into
the center of the custard comes out clean. Transfer the tart to a cooling rack
and let it rest for 5 minutes before removing the sides of the pan. Serve hot,
warm, or at room temperature, or lightly chilled.
